Vegetarian Dessert Recipe: Guiltless Applesauce Cake

Yummy vegan low fat applesauce spice cake for your snacking pleasure

This very moist applesauce cake uses almost no fat, no refined sugar and no salt. It's a satisfying and delicious guilt free treat.

This is a variation on an applesauce cake recipe from the 'Pritikin 28 Day Diet Book.', shared by our friend Carolyn after we enthusiastically munched it at her house.

Low Fat Applesauce Cake

For a nice variation, add 1/2 cup raisins or chopped walnuts. The cake won't be as low in fat and calories, but it'll be more nutritious.

Ingredients

  • 2 1/2 cups whole wheat flour
  • 1/2 cup quick oats
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 Tbsp cinnamon
  • 1/2 tsp all spice
  • 1/2 tsp nutmeg
  • 1/4 cup frozen apple juice concentrate
  • 1 3/4 cup unsweetened applesauce
  • 1 tsp vanilla
  • 2 Tbsp ground flax seed, beaten with 2 Tbsp water until frothy

Directions:

  1. Pre-heat oven to 350 degrees F
  2. Lightly oil a 9" cake pan with vegetable oil
  3. Combine the flour, oats, baking soda, baking powder and spice in a large mixing bowl
  4. Add the apple juice concentrate, applesauce, and vanilla to the dry ingredients and stir till just combined
  5. Stir in the whipped flax seed
  6. Pour batter into prepared pan and bake for 50 minutes
  7. Remove cake from oven and cover with aluminum foil for 10 minutes before removing from pan
