Green Beans With Slivered Almonds

Crunchy, Delicious, Elegant Easy Holiday Vegetable Recipe

Green Bean Recipe: Many terrible things are done to green beans in the name of holiday food, but this green bean recipe isn't one of them.

Green Beans With Toasted Almonds

This holiday vegetable recipe with lightly steamed green beans and toasted almonds is colorful, crunchy, delicious, elegant, and goes well with traditional holiday foods. It's also a simple, easy economical fresh vegetable recipe.

Serve green beans & toasted almonds with vegetarian holiday recipes such as nut loaf, mashed potatoes, vegan stuffing, cashew gravy, cranberry sauce, squash pecan casserole ... etc..

Buy just enough fresh green beans and almonds for this recipe, unless you have another immediate use for them, and cook the green beans right before serving.

4 - 6 Servings: A steamer basket is handy for cooking steamed vegetables, but you can also steam them with 1/2 cup water in the bottom of a saucepan.

Ingredients:

  • 1/2 cup sliced or slivered almonds
  • 1 lb fresh green beans
  • 1 Tbsp lemon juice
  • 1 tsp olive oil
  • Sprinkle of salt & pepper

Directions:

  1. Wash and cut off the ends of green beans. Discard any unattractive beans
  2. Slice beans in 2 inch piecs
  3. Toast almonds on a roasting pan in the oven at 300 degrees for 10 - 15 minutes
  4. Add beans to a steamer basket in a saucepan, with about 1 inch of water
  5. OR: Add green beans to the pot with 1/2 cup water
  6. Cover, bring to a boil, reduce heat to medium low, and steam for 5 - 7 minutes until green beans are crunchy tender
  7. Remove steamer basket, drain off water OR drain the beans through a strainer
  8. Add olive oil & lemon juice to the pot
  9. Add the greens beans & toasted almonds, a sprinkle of salt & pepper if desired, and gently stir
  10. Serve immediately
