Vegan or Vegetarian Mashed Potatoes

Essential Ingredient in a Vegetarian Thanksgiving

People used to eat mashed potatoes almost every day, if not at almost every meal, but they've mostly been replaced with fries.

Now, mashed potatoes are mainly served for holidays meals, with turkey and gravy. That's why we call our humble mashed potato recipe a holiday recipe!

I hope we all agree, mashed potatoes are a necessary part of a vegetarian or vegan Thanksgiving dinner - because our mashed potato recipe goes perfectly with cashew gravy, cranberry sauce, lentil loaf, nut loaf, baked tofu, and vegan stuffing.

Ingredients

  • 6-8 medium size starchy potatoes, such as Russet
  • 2 Tbsp of butter, olive oil or veggie spread
  • 1/2 cup or more milk or cream
  • Vegan Option: Unsweetened non-dairy milk - soy, hemp, or rice milk
  • Salt and pepper to taste

Directions:

  1. Peel thorougly and rinse the potatoes
  2. Cut in large chunks, place in a large pot and cover with cold water
  3. Add a tsp of salt and bring to a boil
  4. Simmer covered on low heat for 15 - 20 minutes, or until the potatoes can be easily pierced with a fork
  5. Drain the potatoes
  6. Add dairy or non-dairy milk, butter or oil, salt and pepper
  7. Mash with a potato masher
  8. Whipped Potatoes: Add a little more milk and beat on low with an electric mixer until smooth and fluffy. Don't overbeat or the potatoes will become gummy
  9. Garlic Potatoes: Lightly brown 1 Tbsp minced garlic (or 1/2 tsp garlic powder) in the oil or butter before adding to the potatoes
