Vegan Quinoa Recipes: Easy Healthy Quinoa Burgers

Easy, healthy vegan quinoa burger recipe: Quinoa veggie burgers are a sure way to get your kids (or anybody else) to eat quinoa.

Start with cooked quinoa, for quinoa burgers ready to eat in a jiffy. Even better, make the veggie burger mix ahead of time so you can enjoy fast food quinoa burgers!

Quinoa Burger

Quinoa burgers make a delicious meal served with roasted potatoes or a hearty soup like pinto bean soup.

For a perfect summer meal, add all your favorite veggie burger fixings, corn on the cob, and potato salad.

For a light meal, skip the bun and fixings. Serve this quinoa burgers with steamed veggies or a green salad.

Makes eight 3 inch quinoa veggie burgers: Make extra quinoa burger mix so you'll have enough patties to freeze (cooked or uncooked) for healthy fast food meals at home or to take along. Cold quinoa burger patties make great sandwiches.

Ingredients:

  • 1 1/2 cups cooked quinoa
  • 2/3 cup hummus OR 1/2 cup mashed cooked chickpeas + 2 Tbsp water
  • 2 Tbsp tomato paste
  • 2 Tbsp ground flaxseed meal
  • 1 Tbsp soy sauce OR Bragg's Liquid Aminos
  • 1 tsp dried basil leaf
  • 1/2 tsp dried thyme leaf
  • 1/2 tsp gr cumin seed
  • 1 tsp gr coriander seed
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 2 Tbsp brown rice powder OR vital wheat gluten
  • Salt & pepper to taste

Directions:

  1. Heat a non-stick frying pan on med. low
  2. Dry roast the cumin, coriander, paprika and garlic powder, stirring, 5 min.
  3. Blend all ingredients in a bowl or food processor
  4. If you have time, chill the mixture for an hour or so before forming into patties, for a firmer patty.
  5. Divide burger mix into 8 equal portions and form into 3 inch patties
  6. Fry in a little oil on medium heat, 5 - 10 minutes each side, until browned and firm
  7. To freeze uncooked, place the patties between sheets of wax paper on a baking sheet and freeze. Store in a freezer bag or plastic container and cook as needed (thaw in fridge or microwave)

Question: Are these burgers able to "hold together"? - Louise J.

Answer: They hold together pretty well, though not as well as tofu burgers. Everything binds together as they cook. And it helps if you have time, to chill the mixture for an hour before cooking.
