Steamed Cauliflower and Green Beans

Steamed Cauliflower & Green Beans With Fresh Dill Sauce

Cooking Tips: The sauce isn't cooked but just mixed together in a bowl. The ingredients can be found in most supermarkets. If you can't find fresh dill, I would say use dried, or substitute a different fresh herb, such as basil or parsley.

For a quick lunch or dinner, combine this cauliflower & green bean recipe with rice or quinoa and fried tofu.

If you have more time to play in the kitchen, try this steamed vegetable recipe with Spicy Tofu Rice Pilaf. Make extra and mix the leftovers together for a take-along lunch the next day.

Ingredients:

  • For The Sauce:
  • 2 Tbsp chopped fresh dill
  • 1/2 cup organic cream of coconut or coconut milk
  • 1 Tbsp lemon juice
  • pinch turmeric
  • salt & pepper to taste

  • For The Vegetables
  • 1 cup bite sized pieces fresh grean beans
  • 1 small head cauliflower, trimmed and broken or cut into bite-sized florets (2 - 3 cups)

Directions

  • First, make the sauce: In a mixing bowl, stir together all the ingredients. Cover and refrigerate for at least 1 hour

  • Bring the filtered water to a boil in a steamer or in a saucepan with a steamer insert
  • Add the green beans, cover, and steam for 5 minutes.
  • Add the cauliflower, cover, and continue steaming until the vegetables are tender but still slightly firm, 5 - 7 minutes more
  • When the vegetables are done, arrange them on a platter, in a serving dish, or on individual plates.
  • Pour the sauce over them and serve immediately
